Hey Sweet Tooth! 🍪
It's been far too long!
The last time I got in touch was back in February, which honestly feels like a lifetime ago. So much has happened since then that has kept me busy (and unfortunately away from you guys!).
There have been vegan festivals, pop-ups, exhibitions, weddings, birthdays, and so many exciting things happening behind the scenes. If you've been wondering what we've been up to, it's all over on our Instagram—the only social media platform I can just about manage to stay on top of! 😅
If you aren't already, make sure you're following @The_Eggless_Baker for all the latest updates, new products and behind-the-scenes baking.

The Biggest Decision I've Ever Had to Make
Today, I wanted to tell you about one decision that could have completely changed the future of The Eggless Baker.
Back in April, we exhibited at the Food & Drink Expo. It's a trade-only exhibition where businesses such as restaurants, cafés, hotels and farm shops come looking for exciting new products to stock.
It was a fantastic few days. We met some brilliant people, made some great contacts and secured new business that we're really excited about.
But then I met a distribution company.
They loved our cookies.
Not just a little... they wanted to place an order for 16,000 cookies every single week.
The plan was to launch them into retail stores across the country.
It felt massive.
For a moment, it genuinely felt like I was about to step into a completely new chapter. My head was racing with excitement. I knew it would mean moving into a bigger premises, investing in more equipment and hiring more staff. It was daunting, but I truly believed I was ready.
We agreed to a one-month trial to see how things worked for both sides.
It honestly felt as though the previous nine years had all been leading to this moment.
But they hadn't.
--------------------------------------
The Trial
We began with an order of 4,000 cookies a week.
It wasn't easy. There were plenty of challenges throughout the process (that's definitely a story for another newsletter!), but we got there.
Part of the agreement was that the cookies wouldn't carry The Eggless Baker name. Instead, they would be sold under a completely different retail brand that would be built around the product itself.
At first, I convinced myself it was a compromise worth making.
The order was huge.
The opportunity was incredible.
And I kept telling myself that if more people could buy an amazing vegan and eggless cookie, maybe that meant fewer products containing eggs would be sold instead. That felt like a positive trade-off, and one I was happy to make.
So I carried on.

What I Started Losing
But after a few weeks, something didn't feel right. I couldn't quite put my finger on it.
Then one evening, it suddenly clicked - I wasn't satisfied.
I realised I'd spent the last nine years building something that meant so much more than just selling cakes and cookies.
Every order.
Every pop-up.
Every wedding.
Every birthday.
Every market stall.
Every single one has been about building The Eggless Baker into a business that people trust. A business where customers know every bake is made fresh, with care, and where quality always comes first.
With the sheer volume of cookies we were producing each week, we were having to turn away orders from our own customers.
That was heart-breaking.
The satisfaction simply wasn't there in volume baking.
The Eggless Baker has always been built around baking fresh for every single order. It's about recognising familiar faces at markets. It's about chatting to customers while they choose their brownies. It's about making desserts for birthdays, weddings and celebrations that actually mean something.
It's about the connection.
It's about the community.
And I realised that this order would have taken me further and further away from the very thing I'd spent nine years building.
--------------------------------------
Walking Away
So I made one of the hardest business decisions I've ever had to make.
I walked away.
Not because the opportunity wasn't incredible. Not because I didn't believe in the product. And certainly not because I didn't want to see a fantastic vegan and eggless cookie available in shops across the UK.
I absolutely did. That was the part that made the decision so difficult. But I realised that success doesn't mean much if you lose the reason you started in the first place.
The Eggless Baker was never meant to become a factory. It was meant to be a bakery. A place that makes fresh bakes for real people, celebrates life's biggest moments, and builds a genuine community around amazing eggless desserts.
That's what I love.
And that's what I'm choosing to protect.

Thank You
I know I don't always email. I don't always post. Sometimes weeks go by before I realise how quiet I've been.
But the truth is, I'm spending those days doing exactly what I love—planning, testing recipes, baking, and trying to create the very best eggless, vegan and gluten-free desserts I possibly can for all of you.
Thank you for supporting a small business that chooses quality over shortcuts, community over convenience, and people over profit.
I genuinely wouldn't be here without you.
I hope to see many of you at our markets, pop-ups and events over the coming months. And if you cannot make it, you can always order postal boxes through our website!
Until next time...
Pardeep 💜
